DASH-friendly take on Chipotle burrito bowls. Cilantro-lime rice, seasoned black beans, and smoky chicken — all the flavor with a fraction of the sodium.

Ingredients

Chicken:

  • 2 lbs boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne
  • Juice of 2 limes

Cilantro-Lime Rice:

  • 1 1/2 cups long-grain white rice
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped

Black Beans:

  • 2 cans (15 oz) no-salt-added black beans, drained
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Juice of 1/2 lime

Toppings:

  • 2 avocados, sliced
  • 1 cup cherry tomatoes, quartered
  • 1/4 cup red onion, diced
  • Fresh cilantro
  • Lime wedges
  • Hot sauce (to taste)

Instructions

  1. Toss chicken with olive oil, all spices, and lime juice. Marinate 30 min or grill immediately.
  2. Grill or pan-sear chicken over medium-high heat, 5-6 min per side. Rest, then slice or chop.
  3. Cook rice per package. Fluff with lime juice and cilantro.
  4. Warm black beans in a small pot with cumin, garlic powder, and lime juice.
  5. Build bowls: cilantro-lime rice, black beans, chicken, avocado, tomatoes, red onion, cilantro, lime wedge.

Notes

DASH-friendly: No-salt-added beans are key. Avocado provides potassium and healthy fats. Skip sour cream or use plain Greek yogurt instead. This is a meal prep champion — makes 5 lunches easily.
